Sodus Fire Department- Rib Fest & Amateur BBQ Challenge

We were able to participate in our first ever BBQ Competition fall of 2021. There were 3 elements to this competition- burgers, brisket & ribs.


For our burger we made two kinds of sliders. One was a blend of our house made queso, salt, pepper & garlic topped with more queso! The other variety was our homemade BBQ sauce & maple bacon seasoned with salt, pepper, parsley & garlic- then topped with more bacon and of course queso! Competition was stiff for the burgers but we had a great time coming up with flavor combos.


For our ribs we used our signature dry rub paired with our homemade vinegar based BBQ sauce. The sauce gave the perfect crispy coating and paired perfectly with the dry rub. They took about 5 hours to smoke and sit. They were placed on a bed of lettuce and dressed with fresh parsley- received a perfect score for presentation!


For our brisket we went simple perfect- salt, pepper and garlic with a low and slow cook on the smoker for 11 hours. Also dressed with fresh parsley we earned a 4th place position with above average scores for cook, presentation, tenderness and taste.


All in all, we did not place but had a fantastic day filled with music, drinks, friends and family. Thanks so much for all the support and keep your eyes peeled for many more competitions to come!
